Halloumi sweetcorn and coconut noodles

Easy, quick and one pot.

Serves 1

Ingredients

  • 0.5 Block of Halloumi, cubed

  • Sesame Oil

  • 1 Garlic

  • Ginger

  • 2-3 tbsp Thai Red Curry Paste

  • 75g Sweetcorn

  • 1 nest of Noodles

  • 125ml Water

  • 260ml Coconut Milk

Method

  1. Fry the halloumi until golden on all sides - remove from pan

  2. Fry the garlic and ginger in sesame oil, then add the curry paste

  3. Add the sweetcorn, noodles and water

  4. Once the noodles have softened, add the coconut milk and simmer until the noodles are cook

  5. Serve with the halloumi on top
