Halloumi and tomato curry

The wonderful texture of halloumi ensures this curry is as comforting as you desire.

Serves 2

Ingredients

  • 225g Halloumi, Cubed

  • 1 Onion

  • Garlic

  • Ginger

  • 2 tsp Cumin

  • 2 tsp Coriander

  • 1 tsp Turmeric

  • 1 Tin Tomatoes

  • 100g Ricotta

  • 100g Spinach

  • 2 tsp Sugar

  • 1 tbsp Garam Masala

  • Rice

Method

  1. Fry the halloumi until golden on all sides

  2. In a separate pan, fry the onion

  3. Add the garlic and ginger

  4. Stir in the cumin, coriander and turmeric

  5. Add the tomatoes and simmer for up to 10 mins

  6. Add the ricotta

  7. Add the halloumi with the spinach, sugar and garam masala

  8. Serve with rice
