Harissa aubergine beans

These beans are lightly spiced and punching with flavour.

Serves 4

Ingredients

  • 1 Spring Onion

  • 2 Garlic

  • 1 Aubergine, cubed

  • 200g Cherry Tomatoes

  • 500g White Beans (with juice)

  • 200g White Beans (with juice)

  • 60g Coconut Yoghurt

  • 60ml Milk

  • 40g Sun Dried Tomatoes

  • 1 tsp Harissa Paste

  • 2 tbsp Parmesan

Method

  1. Fry the spring onion and garlic, then add the aubergine for 10 mins.

  2. Add the tomatoes

  3. Separately, blend the sauce ingredients together and season to taste

  4. Add the beans and juices to the aubergine pan as well as the sauce.

  5. Simmer with a lid for 10 mins

  6. Serve with grains or toasted bread
