Lemon and courgette pasta

This pasta is simple and refreshing

Serves 2

Ingredients

  • 200g Spaghetti

  • 2 Courgettes

  • 1 Onion/Shallot

  • 4 Garlic

  • 175ml White Wine

  • 50g Parmesan

  • 50g Butter

  • 1 Lemon, juiced

Method

  1. Cook the pasta (save some pasta water)

  2. Fry the courgette slices until caramelised, and set aside on paper towel

  3. Fry the onion, then add the garlic

  4. Pour in the wine and let it bubble off

  5. Add the drained pasta and courgettes, parmesan and butter

  6. Mix and add pasta water to loosen

  7. Add more parmesan and butter to make a silky sauce

  8. Stir through the lemon juice
