Lentil and squash soup

A spiced soup to warm you up on a cold day.

Serves 4-6

Ingredients

  • 2 Onions

  • 2 Garlic

  • 1/4 - 1/2 tsp Chilli Powder

  • 1 tbsp Ras El Hanout

  • 1 Butternut Squash

  • 100g Red Lentils

  • 1l Veg Stock

  • 1 bunch Coriander

Method

  1. Fry the onions until softened, then add the garlic, chilli and ras el hanout

  2. Stir in the squash and lentils

  3. Pour over the stock

  4. Simmer for 25 mins

  5. Once the squash is soft, blitz the soup until smooth

  6. Stir in the coriander
