Mushrooms and lentils

Enjoy these mushrooms on a cosy evening.

Serves 2

Ingredients

  • 1 Onion

  • 2 Garlic

  • 300g Mushrooms

  • 1 Tin Lentils

  • 300ml Stock

  • 50g Ricotta

  • 20g Pesto

  • 50g Tomato Puree

  • Basil

  • Rice or Couscous

Method

  1. Fry the onion, garlic and basil stems

  2. Add the mushrooms

  3. Add the lentils and 200ml of stock

  4. Add the ricotta and tomato puree, if needed add a splash of stock

  5. Cook for 5-10 mins

  6. Stir in the pesto and basil

  7. Serve with rice or couscous
