Peanut butter and jam oat bars

Such an easy on-the-go breakfast.

Serves 4-6

Ingredients

  • 200g Oats

  • 1 Banana

  • 1 tsp Vanilla Extract

  • 2 tbsp Brown Sugar

  • 2 tbsp Peanut Butter

  • 1 tsp Baking Powder

  • 5 tbsp Milk

  • 400g Frozen Raspberries

  • 1 tbsp Chia Seeds

  • 1 tsp Vanilla Extract

Method

  1. Simmer the fruit with the chia seeds and vanilla extract until defrosted and bubbling. Leave to cool and thicken

  2. Mash the ripe banana and add the vanilla extract, peanut butter, sugar, baking powder and milk. Mix together then add the oats

  3. Line a baking dish with baking paper and press 2/3 of the mixture into the bottom. Top with the jam. Crumble the remaining oat mixture over the top

  4. Bake for 20 mins at 170C

Change up your jam using different frozen fruits such as blueberries
