Spinach and ricotta gnudi

Gnudi were new to me but undoubtedly delicious.

Serves 2

Ingredients

  • 100g Spinach

  • 250g Ricotta

  • 1 Egg

  • 2 tbsp Flour

  • 40g Parmesan

  • 250g Mushrooms

  • 1 Red Onion

  • 2 Garlic

  • Rosemary

  • 1 tbsp Flour

  • 350ml Veg Stock

  • 1 tbsp Ricotta

Method

  1. Wilt the spinach and squeeze out any excess moisture, finely chop

  2. Mix together the ricotta, egg, flour, parmesan and spinach - set aside

  3. Fry the onion, then add the mushrooms

  4. Stir in the garlic and rosemary, then add the flour

  5. Slowly add the stock and simmer for 5 mins

  6. Stir in the ricotta

  7. Pour the sauce into an oven proof dish. Form the gnudi mix into balls and place onto the sauce. Bake at 180C for 15-20 mins
