Squash and sage beans

Squash is a perfect veg to get you through the winter.

Serves 2

Ingredients

  • 1 Butternut squash

  • 1 tsp Dried Sage

  • 2 Shallots / 1 Onion

  • 2 Garlic

  • 2 Tin Butter Beans

  • 200ml Veg Stock

  • 100ml Milk

  • 2 tbsp Parmesan

  • Bread

Method

  1. Toss the squash in oil and dried sage. Bake for 25 mins

  2. Fry the shallots/onions, then add the garlic

  3. Add the butter beans and season

  4. Blitz together the cooked squash, milk, stock and parmesan. Pour the sauce into the beans

  5. Simmer for 10 mins

  6. Serve with your favourite bread - toasted & buttered
