
Sweet potato and halloumi salad
Textures and flavours coming together as a dance in your mouth.
Serves 2-4
Ingredients
1 Sweet Potato
1 Tin Chickpeas
1.5 tbsp Olive Oil
1 tsp Onion Salt/Granules
0.5 tsp Smoked Paprika
1 block of Halloumi
2 cups Brussel Sprouts, shredded
1 Apple
0.5 cups Red Onion
1.5 tbsp Mustard
2.5 tbsp Honey
1 tsp Chilli Flakes
1 Garlic, minced
4 tbsp Apple Cider Vinegar
2.5 tbsp Olive Oil
Method
Chop the salad ingredients into bite size pieces
Coat the sweet potato and chickpeas in oil, onion salt and smoked paprika. Bake for 25 mins
Fry the halloumi until golden
Whisk together the dressing ingredients
Add the sprouts, chickpeas, sweet potato, halloumi, apple and red onion. Toss the dressing over the salad
