Tofu tikka masala

Rich and silky masala is super easy to put together.

Serves 3

Ingredients

  • 250g Tofu

  • 1 Onion

  • 1 tbsp Ginger

  • 1 tsp Mustard Seeds

  • 2 tbsp Curry Powder

  • 0.5 tsp Chilli Flakes

  • 1 Tomato, chopped

  • 180ml Coconut Milk

  • 130g Coconut Yoghurt

  • 0.25 cup Cashews, chopped

  • 3 tbsp Tomato Puree

  • 0.5 Lime Juiced

Method

  1. Fry the tofu until golden on all sides

  2. In a separate pan, fry the onions then add the ginger and mustard seeds

  3. Add the curry powder and chilli

  4. Add the tomato, coconut milk, yoghurt, cashews and tomato puree

  5. Add the lime juice

  6. Serve with rice and naan
