
Tortellini
Comes together quickly, perfect for a weeknight dinner
Serves 2-4
Ingredients
Garlic
30g Sun Dried Tomatoes
1 tsp Mixed Herbs
1 tsp Red Pepper Flakes
2 tbsp Flour
450ml Veg Stock
500g Tortellini
120 ml Cream
100g Spinach
160g Parmesan
Method
Fry the garlic and sun dried tomatoes, herbs and chilli flakes
Add the flour to create a roux
Pour in the veg stock, let it thicken for 5 mins
Add the tortellini
Add the cream, spinach and parmesan
