Tortellini

Comes together quickly, perfect for a weeknight dinner

Serves 2-4

Ingredients

  • Garlic

  • 30g Sun Dried Tomatoes

  • 1 tsp Mixed Herbs

  • 1 tsp Red Pepper Flakes

  • 2 tbsp Flour

  • 450ml Veg Stock

  • 500g Tortellini

  • 120 ml Cream

  • 100g Spinach

  • 160g Parmesan

Method

  1. Fry the garlic and sun dried tomatoes, herbs and chilli flakes

  2. Add the flour to create a roux

  3. Pour in the veg stock, let it thicken for 5 mins

  4. Add the tortellini

  5. Add the cream, spinach and parmesan
